Peach Pie



Peach Pie. Yum!

Just the sound of it makes you think of a warm summer day sitting on the porch.

Ingredients

1 9"
pie crust, BAKED
1 cup peaches, thinly sliced
3/4 cup water
3 Tbsp cornstarch
1 cup sugar
3 tsp lemon juice
3 1/2 cups peaches, sliced

Simmer the 1 cup of thinly sliced peaches and water for 3 to 4 minutes.
Add cornstarch and sugar.
Cook until thick and clear.

Remove from heat; add lemon juice.
Cool glaze slightly.

Arrange the 3 1/2 cups of peaches in the crust.
Cover peaches with the cooked glaze.

Refrigerate about 3 hours.

Serve with whipped cream or ice cream.
