Peach Pie
Peach Pie. Yum!
Just the sound of it makes you think of a warm summer day sitting on the porch.
Ingredients
| 1 9" |
pie crust, BAKED |
| 1 cup | peaches, thinly sliced |
| 3/4 cup | water |
| 3 Tbsp | cornstarch |
| 1 cup | sugar |
| 3 tsp | lemon juice |
| 3 1/2 cups | peaches, sliced |
Simmer the 1 cup of thinly sliced peaches and water for 3
to 4 minutes.
Add cornstarch and sugar.
Cook until thick and clear.
Remove from heat; add lemon juice.
Cool glaze slightly.
Arrange the 3 1/2 cups of peaches in the crust.
Cover peaches with the cooked glaze.
Refrigerate about 3 hours.
Serve with whipped cream or ice cream.
