Graham Cracker Pie
Huh? Graham Cracker Pie? This sounds more like a recipe for the crust. Well, you're right. But, the rest of the pie is a little hard to explain in 1 or 2 words. So, we call this Graham Cracker Pie. OK?
Since you're making this crust yourself, you might as well try and find a nice decorative pie plate bake and serve your pie.
Ingredients

| 14 | crushed graham cracker |
| 1 tsp | flour |
| 3 Tbsp | sugar |
| 2 Tbsp | cinnamon |
| 1/2 cup | butter, melted |
| Filling: | |
| 2 1/2 Tbsp | cornstarch |
| 1/8 tsp | salt |
| 3 Tbsp | sugar |
| 2 | egg yolks |
| 1 tsp | vanilla extract |
| 2 1/2 cups | milk |
| Merinigue: | |
| 2 | egg whites |
| 3 Tbsp | sugar |
Preheat oven to 325 degrees.
Crust:
Combine graham crackers, flour, sugar, cinnamon and butter, mixing well.
Reserve 1/4 of crumb mixture.
Press remainder into 9-inch pie pan.
Filling:
Mix cornstarch, salt and sugar.
Stir in egg yolks, then gradually add milk and vanilla.
Cook, stirring occasionally, until thickened.
Pour into crust.
Meringue:
Beat 2 egg whites until stiff.
Gradually beat in 3 Tbsp sugar.
Spread top of pie with meringue. Sprinkle with reserved crumb
mixture.
Bake at 325 approximately 20 minutes, or until golden.
