Coconut Custard Pie



OK, I'm going to show my age here. Whenever I hear about Coconut Custard Pie I think about Mary Ann making a coconut cream pie for Gilligan, because that was his favorite on Gilligan's Island. Now, Coconut Cream Pie is my mother's favorite pie. Unfortunately, Gilligan always seems to come to mind first.

Ingredients

1 9" deep-dish pie crust, unbaked
2/3 cup sugar
2 2/3 cups milk
2 cups shredded coconut
1 1/2 tsp vanilla extract
4 eggs, slightly beaten
1/2 tsp nutmeg to sprinkle

Preheat oven to 450 degrees.

Beat sugar, salt, milk, coconut and vanilla into eggs.
Pour into pie crust and sprinkle with nutmeg.

Bake at 450 for 15 minutes.
Reduce to 350 and bake for 25 - 30 minutes, or until set.
