Noodle Pudding



This creamy dessert has just the right texture and consistency for a tasty pudding dessert. If you want to be good, you can try making it with low-fat cottage cheese and sour cream.

Ingredients

4
eggs
1 tsp lemon rind, grated
3 Tbsp lemon juice
3/4 cup sugar
1/8 tsp salt
1 1/2 cups cottage cheese
1/2 cup sour cream
8 oz pkg medium noodles, cooked

Preheat oven to 350 degrees.

In mixing bowl, combine eggs, lemon rind and juice.

Beat until foamy.

Add sugar and salt.

Beat in cottage cheese and sour cream.

Fold in noodles.

Pour into ungreased 12"x7" baking dish.

Bake at 350 degrees for 35 minutes or until knife inserted just off center comes out clean.

Serves about 12.
