Mint-Chocolate Chip Meringues
These cookies will take all night to prepare. JUST KIDDING! They will actually take all night. But, you don't have to leave the oven on and you can still go to bed.
Ingredients
| 1 6 oz pkg | chocolate morsels |
| 1 6 oz pkg | mint chips |
| 1/2 cup | sugar |
| 3 | egg whites, stiffly beat |
Preheat oven to 375 degrees.
Butter cookie sheet.
In a mixing bowl, beat egg whites until they form stiff peaks.
Fold in sugar at a low spead.
Fold in chips, beating briefly at the lowest speed.
Drop onto cookie sheet using teaspoon.
Place in oven and then SHUT OFF OVEN! and go to bed.
Once they're done place them in a tightly-sealed container and store in a cool, dry place or in the freezer.
Makes about 40 meringues.
