Lemon Glazed Sugar Cookies
These Lemon Glazed Sugar Cookies are an elegant dessert that are easy to make. But, they look like you spent hours on them. And, to tell you the truth, if you don't feel like making the glaze and topping these cookies, just make the cookies. They'll stand up well on their own.
Ingredients
| Cookie Mixture: | |
| 1 cup | butter |
| 3/4 cup | sugar |
| 2 tsp | lemon extract |
| 2 cups | flour |
| 1/2 tsp | baking powder |
| 1/4 tsp | salt |
| Glaze: | |
| 1 1/2 cups | confectioners' sugar |
| 1 1/2 tsp | lemon extract |
| 4-5 tsp | water |
| lemon rind to garnish |
Preheat oven to 400 degrees.
Combine butter, sugar and lemon in mixer.
Mix well to creamy.
Add flour, baking powder, salt.
Roll dough into 1-inch balls; place 2 inches apart on cookie sheet.
Flatten balls to 1/4 inch thickness with the bottom of a buttered glass
dipped in sugar.
Bake for 7-9 min.
Stir together glaze ingredients with wire whisk.
Decorate cookies with glaze and lemon rind.
Makes 3 1/2 dozen cookies.
