Lemon Bars



These are a great Summer-time dessert. They're very light and tasty, and very easy to prepare. They're just the sort of dessert you want when the temperature outside starts getting close to matching you're own body temperature.

Ingredients

Crust:  
1/2 cup butter
1 1/2 cups flour
1/3 cup confectioners' sugar
   
Topping:  
1 1/2 cups sugar
3 Tbsp flour
3 eggs, beaten
1/3 cup lemon juice
1/2 cup confectioners' sugar

Custom Search

Preheat oven to 350 degrees.
Crust:

Cream ingredients well.
Press mixture into lightly greased 9x13 pan.
Bake 350 for 20 minutes.


Topping:

Sift sugar and flour. Stir in eggs and lemon juice.
Pour over hot crust.

Bake 20 minutes.
Cool a bit.

Sift confectioners' sugar over top.
Cut into bars while warm.

Makes 40 bars.
