Easy Sugar Cookies
If you don't have the time OR the desire to get out the rolling pin and cookies cutters, but, you still want some delicious sugar cookies, this is the recipe for you. Although, I do think that a circular cookie somehow taste different from one shaped like a Christmas tree. But, sometimes I really don't feel like getting out the cookie cutters.
You still have to let this dough chill in the refrigerator. But, you don't have to worry about rolling it out. If you WANT to use the rolling pin and cookie cutters, check out our Rolled Butter Cookies recipe.
Ingredients
| 1 cup | butter, softened |
| 1 1/2 cups | sugar |
| 2 tsp | cream of tartar |
| 1 tsp | baking soda |
| 2 | eggs |
| 1 1/2 tsp | vanilla extract |
| 2 3/4 cups | flour |
| 1/3 cup | sugar, for dipping |
Cream together butter and 1 1/2 cups sugar until fluffy.
Add cream of tartar and baking soda.
Add eggs and vanilla and flour.
Cover and refrigerate about 2 to 3 hours or until dough is easy to handle.
Shape dough into 1-inch balls. Roll balls in 1/3 cup sugar.
Place balls about 2 inches apart on an ungreased cookie sheet.
Bake at 375°F oven for 7 to 8 minutes or until edges are lightly browned.
Makes about 60 cookies.
