Apricot Squares



Don't like apricots? How about peaches? Raspberries? Strawberries? This recipe is open to suggestion. No offense will be taken if you chose to substitute the apricot preserves with any other type of fruit preserves. So, take your best shot.

You can bake these Apricot Squares in the usual 9x9 baking pan. OR, you can go wild and try these cute shortbread pans for a little variety.

Ingredients

3/4 cup butter
1 cup sugar
1 egg, beaten
1 cup shredded coconut
2 cups flour
1/8 tsp salt
1 1/2 tsp vanilla extract
1-2 jars apricot preserves

Custom Search

Preheat oven to 350 degrees.
Grease 9"x9" baking pan.

Cream butter and sugar.
Add egg, coconut, flour, salt and vanilla.

Press half of batter into greased 9x9 pan.
Cover with preserves.
Press other half of batter on top

Bake at 350 for 30-35 minutes.

Makes 20 squares
