What’s not to love about cookies?
Cookies are great because you can make them any way you want.
You’ll probably think I’m crazy, but I actually like making Chocolate Chip Cookies WITHOUT the chocolate chips. I always put a few spoonfuls of dough on the cookie sheet, before I add the chips. They’re like really rich butter cookies.
I also leave the raisins out of Hermits. But, I leave raisins out of everything, so I don’t know what tells you. You can make your cookies any way you want. Want extra raisins in your Hermits? Go ahead. Don’t like butterscotch chips in your 7-Layer Bars? Leave them out. You can even add more chocolate chips to take their place. I love cinnamon, so I always triple what the recipe asks for.
One of the great things about cookies is that you can make the cookie dough and freeze it for later. My husband bought me a 5 ½ quart KitchenAide Mixer a few years ago and now I can triple or even quadruple my recipe amount. This is very convenient when I’m making the family Christmas cookies. And when I say family, I mean THE WHOLE family: parents, in-laws, brothers and their wives, nieces and nephews. One year I think I made 5 varieties of cookies. And for each variety I made about 8 dozen. But, I digress.
My point is that you have a lot of flexibility, take advantage of it.
