Caramels
Can you really make your own caramels? Sure. Give it a try.
If you want to do more candy making, you may want to invest in a candy thermometer.
Ingredients
| 2 1/2 Tbsp | butter |
| 2 cups | brown sugar |
| 2 Tbsp | molasses |
| 1/2 cup | condensed milk |
| 4 oz | unsweetened chocolate |
| 1 tsp | vanilla extract |
| 1 cup | chopped nuts, optional |

Melt the butter, add the sugar, molasses and the milk and bring
to a boil.
Cut the chocolate in small pieces and add, stirring constantly until
the chocolate is melted.
Boil until the caramel forms a soft ball when dropped in cold water.
Add the extract and the nuts, if desired and pour into a greased pan.
Cool a little and when fairly firm, cut in squares.
