Caramels



Can you really make your own caramels? Sure. Give it a try.

If you want to do more candy making, you may want to invest in a candy thermometer.

Ingredients

2 1/2 Tbsp butter
2 cups brown sugar
2 Tbsp molasses
1/2 cup condensed milk
4 oz unsweetened chocolate
1 tsp vanilla extract
1 cup chopped nuts, optional

Melt the butter, add the sugar, molasses and the milk and bring to a boil.
Cut the chocolate in small pieces and add, stirring constantly until the chocolate is melted.
Boil until the caramel forms a soft ball when dropped in cold water.
Add the extract and the nuts, if desired and pour into a greased pan.

Cool a little and when fairly firm, cut in squares.
