Orange Cake
Feeling really guilty about eating chocolate? Why not try this tasty Orange Cake as a substitute. You'll still be getting your cake, but you'll feel better because you'll be getting your fruit, too. Am I grasping as straws here? You betcha!
Now, how about a little silliness with this recipe? If you're really getting into this baking thing, how about going back to nature and getting your ingredients direct from the earth. Want a really fresh orange cake? Try growing your own oranges. I know, I know, I'm being ridiculous here.
Ingredients
| 2 1/2 cups | flour |
| 1 2/3 cups | sugar |
| 2/3 cup | butter, softened |
| 1 tsp | salt |
| 3/4 cup | orange juice, strained |
| 3 1/2 tsp | baking powder |
| 3 | eggs |
| 1/3 cup | water |
| 1 Tbsp | grated orange rind |
| OR 2-3 Tbsp | orange juice concentrate |
Preheat oven to 375 degrees.
Grease 9"x13" baking dish.
Cream together butter and sugar.
Add flour, salt and orange juice.
Add remaining ingredients: baking powder, eggs, water and orange rind,
in order.
Pour into greased 9x13 dish.
Bake at 375 about 30 minutes.
Makes 1 cake.
