Cinnamon Coffee Cake



No, I don't drink coffee. But, that doesn't stop me from making this Cinnamon Coffee Cake. Since I love cinnamon, this is one of the recipes that I have fun with by using more of the good stuff. You know, the best part of a coffee cake; the cinnamon, sugar, nut filling.

If you really want to go wild, you can try making this cake with more than 1 layer of the good stuff. Or, add extra nut mixture on top of the cake. This recipe calls for baking your coffee cake in a rectangular 9" pan. Ingredients

Nut Mixture:  
3/4 cup chopped nuts
3/4 cup sugar
3 Tbsp cinnamon
   
Cake:  
1/2 pint sour cream
1 cup sugar
2 Tbsp cinnamon
1/2 cup butter
2 eggs
1 1/2 tsp vanilla extract
1 Tbsp lemon juice
2 cups flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Preheat oven to 350 degrees.
Grease 9"x9"x2" pan.

Mix together and set aside for nut mixture: 3/4 cup sugar, nuts, and cinnamon.

Cream butter and beat in 1 cup sugar, eggs, vanilla and lemon juice.
Combine flour, baking powder, soda, cinnamon and salt.
Add dry ingredients to butter mixture, alternately with sour cream.

Pour 1/2 batter into buttered 9 x 9 x 2 pan, sprinkle with some of the cinnamon mixture.
Spread remaining batter and add remainder of topping.

Bake at 350 for 35 minutes.

Makes 1 cake.
