Cinnamon Coffee Cake
No, I don't drink coffee. But, that doesn't stop me from making this Cinnamon Coffee Cake. Since I love cinnamon, this is one of the recipes that I have fun with by using more of the good stuff. You know, the best part of a coffee cake; the cinnamon, sugar, nut filling.
If you really want to go wild, you can try making this cake with more than 1 layer of the good stuff. Or, add extra nut mixture on top of the cake. This recipe calls for baking your coffee cake in a rectangular 9" pan. But, once again, you can be creative and try some of the neat pans you can find, like this Heart-Shaped Cake Pan, at Cooking.com
Ingredients

| 3/4 cup | chopped nuts |
| 3/4 cup | sugar |
| 3 Tbsp | cinnamon |
| Cake: | |
| 1/2 pint | sour cream |
| 1 cup | sugar |
| 2 Tbsp | cinnamon |
| 1/2 cup | butter |
| 2 | eggs |
| 1 1/2 tsp | vanilla extract |
| 1 Tbsp | lemon juice |
| 2 cups | flour |
| 1/2 tsp | baking powder |
| 1 tsp | baking soda |
| 1/2 tsp | salt |
Preheat oven to 350 degrees.
Grease 9"x9"x2" pan.
Mix together and set aside for nut mixture: 3/4 cup sugar, nuts, and cinnamon.
Cream butter and beat in 1 cup sugar, eggs, vanilla and lemon juice.
Combine flour, baking powder, soda, cinnamon and salt.
Add dry ingredients to butter mixture, alternately with sour cream.
Pour 1/2 batter into buttered 9 x 9 x 2 pan, sprinkle with some of the cinnamon
mixture.
Spread remaining batter and add remainder of topping.
Bake at 350 for 35 minutes.
Makes 1 cake.
