Chocolate Mayonnaise Cake



Mayonnaise? Mayonnaise? In a cake? Hmmm. Mayonnaise is for tuna salad. Not cake, right? Wrong. Using mayonnaise, like using sour cream gives this cake a great moistness and just a little bit of a bite. And if you're wondering what happened to the eggs in this recipe, don't worry, they're already in the mayonnaise.

There is nothing complicated in this recipe, because all the ingredients go in one mixing bowl, one after the other. So, if you want a little excitement, you'll have to use some imagination in how you bake it. How about some mini cupcakes? I prefer making the giant cupcakes, but mini cupcakes are great for the kids. They're also a nice treat to give away as gifts for birthdays or holidays. And as an added bonus, they'll bake more quickly!

Ingredients

3/4 cup mayonnaise
1 cup water
1 1/2 tsp vanilla extract
2 cups flour
1 cup sugar
1/2 cup unsweetened cocoa powder
2 tsp baking soda
1/2 tsp salt

Preheat oven to 350 degrees.
Grease and flour 8"x8" baking.

Combine mayonnaise, water and vanilla.
Add flour, sugar, salt, cocoa and baking soda; beat thoroughly.

Pour into greased 8x8 pan.
Bake at 350 for 35 minutes.

Makes 1 cake.

Tip:
If you want to make a layer cake, double the recipe and use two 8" round baking pans for the batter.
