Blueberry Buckle
This Blueberry Buckle is a great summertime recipe. You can find fresh blueberries all over.
I like the cake pans you bake in and then just cover; like this one I found on Cooking.com. And, I must confess. I have to give credit to my husband for introducing me to these pans.
Ingredients
| 1 1/2 cups | sugar |
| 1/2 cup | butter, softened |
| 2 | eggs |
| 1 cup | milk |
| 4 cups | flour |
| 4 tsp | baking powder |
| 1/2 tsp | salt |
| 4 cups | drained blueberries |
| Crumb Topping: | |
| 1 cup | sugar |
| 2/3 cup | flour |
| 2 Tbsp | cinnamon |
| 3/4 cup | butter |
Preheat oven to 375 degrees.
Grease and flour 9"x13" baking pan.
Cream together butter, sugar and egg.
Add milk, flour, baking powder and salt.
Spread batter into greased and floured pan.
Sprinkle with topping mixture of sugar, flour, cinnamon and butter.
Bake at 375 for 45-50 minutes.
Serve warm.
Makes 1 cake.
