Applesauce Cake
Talk about easy! This cake is even easier than the other cakes that use apples. That's because you get to use applesauce instead of having to cut up the apples. Well, I should say it's easier if you use store bought or someone else's applesauce.
If you're like me and prefer to make your own applesauce, you have to take that into consideration. I like making my own applesauce with yet another nifty gadget, the apple peeler, because so many of the store bought applesauces add sugar. And who needs that? The first time I made applesauce I went a little overboard. I had my husband bring back from Vermont about 2 bushels of apples. We were eating applesauce for months. But, it was great.
Ingredients
| 1/2 cup | butter |
| 3/4 cup | sugar |
| 1 | egg, beaten |
| 1 cup | unsweetened applesauce |
| 1/2 tsp | baking soda |
| 2 tsp | baking powder |
| 2 cups | flour |
| 1/2 tsp | salt |
| 1 Tbsp | cinnamon |
| 1 1/2 tsp | nutmeg |
| 1/2 tsp | cloves |
Preheat oven to 350 degrees.
Grease and flour 9"x5"x3" pan.
Cream butter and sugar.
Add egg, then applesauce.
Add baking soda, baking powder, flour, salt and spices.
Pour into greased 9x5x3 pan.
Bake at 350 for 30 minutes.
Makes 1 loaf
