Apple Pudding Cake



Apple and Pudding, don't usually go together. Actually, it sounds like something from Charles Dickens' "A Christmas Carol". But, in this cake, apple and pudding go together deliciously well. Using a nice variety of ingredients, you can make a moist and delicious apple cake in a short time.

This recipe is pushing my limit on the number of ingredients I use. But, 3 of them are just spices, so that doesn't really count. Anyway. . . This cake is usually baked in a 9"x9" baking pan. But, there are so many cool pans out there for baking that you should look around and find something really unique to use for this recipe. That's the fun of baking, you can vary ingredients as well as the bakeware you use.

 

Ingredients

1/3 cup oil
1 cup sugar
1 egg, beaten
1 cup flour
1 tsp baking soda
1/2 tsp salt
1 Tbsp cinnamon
1 Tbsp all-spice
1 Tbsp nutmeg
1 tsp vanilla
2 cups chopped apples
1/2 cup chopped nuts

Preheat oven to 250 degrees.
Grease and flour 9"x9" pan.

Stir together oil, sugar and egg.
Add flour, baking soda, salt and spices. Beat well.
Mix in vanilla apples and nuts.

Spread in greased 9x9 pan.
Bake at 250 for 35-40 minutes.

Makes 1 cake.
