Apple Cake
Apple Cake? A cake with apples? Who puts apples in a cake? Cakes are supposed to be made with chocolate. Right? Not necessarily. This is a variation on an Apple Cake that my mother used to make. The apples make it very moist. And the nuts give it a great crunch. This is a very simple recipe for a tasty Apple Cake. There is nothing complicated, because all the ingredients go in one mixing bowl, one after the other. I like to serve this cake warm with whipped cream. But, you can also serve it with ice cream or even sprinkled with powdered sugar. And if you really like apples, you can serve this cake with some home-made applesauce.
Although the recipe calls for baking this cake in a 10-inch tube pan, there's nothing stopping you from using almost any shaped pan. You can use loaf pans or even round cake pans to make a layer cake. Or, you can even make some muffins. I found these neat muffin pans at KitchenEtc.com that you can use to make some giant muffins.
This cake can also be frozen for up to 2 months. Just cool the cake completely. Wrap in plastic wrap or wax paper and store in a freezer bag.
Ingredients
| 3/4 cup | oil |
| 1 cup | sugar |
| 2 | eggs |
| 1/2 cup | nuts |
| 2 tsp | vanilla |
| 2 cups | flour |
| 1 tsp | baking powder |
| 1 Tbsp | cinnamon |
| 3 cups | chopped apples |
Preheat oven to 350 degrees.
Grease and flour 10-inch tube pan.
Mix together oil, sugar and eggs in mixing bowl.
Add nuts and vanilla.
Fold in flour, baking powder and cinnamon.
Add the chopped apples.
Note: The batter will be thick.
Pour into greased 10-inch tube pan
Bake at 350 for about 50 minutes.
Makes 1 cake.
