Quick & Easy Cake Recipes



Cakes come in all flavors, shapes and sizes. At BakingDesserts.com you’ll find we don’t discriminate. We have recipes for all kinds of cakes; from your basic Chocolate Cake to Applesauce Cake to Carrot Cake, to Coffee Cake. You can bake them in the standard 9” round cake pans. Or, use your 9”x13” pan. Or, try your 8”x 8” pan. Or, if you want to get really fancy, your 10-inch tube pan. (A.k.a., an Angel Food pan). As always, you can bring out the muffin tins, to have individual cakes. Just remember, though, if you use smaller pans you'll have to adjust the bake time for your cakes. Just keep an eye on them the first time you try a new cake pan.

I like to make layer cakes using two 9” round baking pans. But, if you don’t have a lot of time, baking in a 9x13 pan is easier and a lot quicker to frost.

If an anniversary is coming up, it’s very easy to make a heart-shaped cake. Just pour the cake batter into one square (8x8) pan and one round 9” baking pan. Once the cakes are cooled, place the square cake flat towards the bottom half of a large platter. Angle the cake so that it looks like a diamond (points of the cake facing up and down). Cut the round cake in half and place on either side of the top (flat) parts of the square piece. Frost to cover the spaces between the pieces. If all that is too much trouble, just buy one of those new-fangled heart-shaped baking pans. (But, I think that might be cheating.)

As with all my recipes, I like to experiment and vary the recipes according to my tastes. If you like your Applesauce Cake spicy, add more cinnamon and cloves. Don’t like Cream Cheese Frosting on your Carrot Cake, you don’t have to use it. Try frosting with French Frosting or White Snow Frosting. Want more of the best part of a Coffee Cake, the filling? Just double, or even triple the recipe to get the best flavor.
