Surprise Muffins
This recipe is pretty straight-forward, but comes with a little surprise inside. A dab of your favorite jelly or jam gives these quick and easy muffins a tasty surprise.
And for something a little different, I found these giant muffin pans that you can use to make some giant muffins.
Ingredients
| 2 | eggs |
| 1 cup | milk |
| 1/2 cup | butter, melted |
| 3 cups | flour |
| 1 cup | sugar |
| 4 tsp | baking powder |
| 1 tsp | salt |
| jelly or jam |
Preheat oven to 400 degrees.
Grease muffin pans or use paper muffin cups.
In a mixing bowl, combine eggs, milk and butter.
Add flour, sugar, baking powder and salt.
Stir the mixture until the flour is moistened.
The batter should be lumpy. Don't over mix.
Fill greased muffin cups each about 1/2 full.
Drop a teaspoonful of jam or jelly onto the center of the batter.
Add more batter on top to fill the muffin cup 2/3 full.
Bake at 400 for 20-25 minutes.
Makes about 2 dozen.
