Orange Pumpkin Bread



The name of this bread almost sounds like a description of the pumpkin. But, it also tells you about the hint of orange, that you'll find in the bread. A light and refreshing twist on an old favorite.

Ingredients

3/4 cup vegetable oil
4 eggs
1 15 oz can packed pumpkin
2 cups sugar
1/4 cup orange juice
3 1/2 cups flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
2 tsp cloves
1 Tbsp cinnamon
2 tsp nutmeg
1 1/2 cups chopped nuts

Preheat the oven to 350 degrees.
Grease two 8"x4" loaf pans.

In a large mixing bowl, cream together the oil, eggs, pumpkin, and sugar.
Stir in the 1/4 cup orange juice.
In another bowl, sift together the flour, baking powder, soda, salt, cloves, cinnamon and nutmeg.

Combine dry ingredients with the pumpkin mixture and mix well.
Fold in 1 cup of the nuts.

Spoon the batter into the prepared pans.
Sprinkle the remaining nuts on top.

Bake at 350 degrees for 50 to 60 minutes or until a tester inserted near the center comes out clean.
Cool in the pans for 10 minutes, then turn out onto wire racks to finish cooling.
