Orange Pumpkin Bread
The name of this bread almost sounds like a description of the pumpkin. But, it also tells you about the hint of orange, that you'll find in the bread. A light and refreshing twist on an old favorite.
Ingredients
| 3/4 cup | vegetable oil |
| 4 | eggs |
| 1 15 oz can | packed pumpkin |
| 2 cups | sugar |
| 1/4 cup | orange juice |
| 3 1/2 cups | flour |
| 2 tsp | baking powder |
| 2 tsp | baking soda |
| 1 tsp | salt |
| 2 tsp | cloves |
| 1 Tbsp | cinnamon |
| 2 tsp | nutmeg |
| 1 1/2 cups | chopped nuts |
Preheat the oven to 350 degrees.
Grease two 8"x4" loaf pans.
In a large mixing bowl, cream together the oil, eggs, pumpkin, and sugar.
Stir in the 1/4 cup orange juice.
In another bowl, sift together the flour, baking powder, soda, salt,
cloves, cinnamon and nutmeg.
Combine dry ingredients with the pumpkin mixture and mix well.
Fold in 1 cup of the nuts.
Spoon the batter into the prepared pans.
Sprinkle the remaining nuts on top.
Bake at 350 degrees for 50 to 60 minutes or until a tester inserted near
the center comes out clean.
Cool in the pans for 10 minutes, then turn out onto wire racks to finish
cooling.
