Maple Walnut Muffins



This recipe will give you some rich and tasty muffins for your afternoon coffee break.

Try using some pure Vermont Maple Syrup when you make these Maple Walnut Muffins. I also found these giant muffin pans that you can use to make some giant muffins.

Ingredients

1/4 cup butter
1/3 cup maple syrup
2/3 cup milk
1 egg, beaten
1 tsp vanilla extract
1 cup flour
3/4 cup whole wheat flour
1 Tbsp baking powder
1 tsp salt
1 Tbsp cinnamon
1 1/2 cups walnuts, chopped
   
Topping:  
1/2 cup sugar
2 Tbsp cinnamon
1/2 cup walnuts, chopped

Preheat oven to 425 degrees,.
Grease muffin pans or use paper muffin cups.

Topping: Combine 1/2 cup sugar, 2 Tbsp cinnamon and 1/2 cup chopped walnuts

Melt butter.
Add maple syrup, milk, egg and vanilla.
Combine flour, whole wheat flour, baking powder, salt and cinnamon, and add to the liquid mixture; blend well.
Stir in nuts.

Pour into greased muffin pan (fill cups about 3/4 full).

Sprinkle with topping mixture.

Bake at 425 for about 15 minutes.

Makes about 1 dozen muffins.
