Grapenut Bread
A lot of people don't like grapenuts, but I think they're GREAT. No, wait! That's that other cereal. Anyway. . . I have them with milk. I make them with hot milk, like oatmeal. I even put them in yogurt.
So, here's just an extension of a good thing.
Ingredients
| 3/4 cup | grapenuts |
| 1 cup | buttermilk or sour milk |
| 1/2 cup | sugar |
| 2 Tbsp | butter |
| 1 | egg |
| 1 1/2 cups | flour |
| 1 tsp | baking soda |
| 1 tsp | baking powder |
| 1/2 tsp | salt |
Preheat oven to 350 degrees.
Grease 9"x5"x3" pan.
Soak the grapenuts in milk for about 1/2 hour.
Cream sugar, butter and egg.
Mix flour, baking soda, baking powder and salt.
Add to butter mixture.
Pour in greased 9x5x3 pan
Bake at 350 for about 30 minutes.
Makes 1 loaf.
Buttermilk substitution:
If you don't have buttermilk you can sour the milk using:
1 1/2 Tbsp lemon juice to 1 cup milk
or 1 1/3 Tbsp cider vinegar to 1 cup milk.
Allow the mixture to settle and thicken a bit while you mix the rest of the ingredients.
