French Bread



I was going to call this Freedom Bread, but some people might not get it. Politics notwithstanding, this is a tasty bread to make. It comes out nice and crusty.

Ingredients

1 pkg yeast
2 cups water (115 degrees)
1 1/4 Tbsp salt
1 Tbsp sugar
6-7 cups flour
cornmeal  


Dissolve yeast in warm water; stir in salt and sugar.
Add flour 1 cup at a time to make a stiff dough.
Shape the dough into a ball.
Place dough into a greased bowl and flip it over to grease the top.

Cover and let stand in a warm place until it has doubled in size.

Turn dough onto floured board or countertop.

Shape into 2 loaves.
Place on greased baking sheet, which has been sprinkled with cornmeal.
Let rise 5 minutes.

Slash loaves in three places and brush with water.

Place into cold oven; then set to 400 degrees.

Bake about 40 minutes; until crusty and brown.
