Cinnamon Rolls
This recipe is a unique change on the traditional Cinnamon Roll recipe. Don't let the cottage cheese turn you off. If you try it, you'll be duly rewarded with delicious cinnamon rolls.
Ingredients
| 2 pkg | yeast |
| 3/4 cup | warm water, ~ 115 degrees |
| 5 cups | flour |
| 1 cup | sugar |
| 1 1/2 tsps | salt |
| 1 cup | butter |
| 3 cups | cottage cheese |
| 2 | eggs, large |
| FILLING: | |
| 3 cups | brown sugar |
| 1 cup | butter |
| 6 Tbsp | cinnamon |
Preheat oven to 375 degrees.
Dissolve the yeast in warm water. Let sit until it begins to bubble and foam.
Sift the flour, sugar and salt into a bowl.
Cut in butter until mixture becomes coarse.
In a blender, mix the cottage cheese with the eggs and yeast for approximately
20 seconds.
Add the wet mixture to the dry and stir.
Place the dough on a lightly floured board and shape it into a ball.
Let the dough rest for about 15 min.
Prepare the filling by mixing the brown sugar, butter and cinnamon
until it becomes crumbly.
Roll the dough into a rectangle about 1/2 inch thick.
Sprinkle the filling onto the dough and roll it up.
Cut into 1-inch slices.
Place slices, cut side down on buttered cookie sheet.
Let double the dough rest and double in size.
Bake at 375 for 20 min.
