Blueberry Muffins



There's just something about the smell of blueberry muffins baking in the morning. It gives you a nice toasty, comfortable feeling. You can get that feeling any time you want with this recipe. And for something a little different, I found these giant muffin pans that you can use to make some giant muffins.

Ingredients

6 Tbsp butter
1 1/4 cups sugar
2 eggs
2 cups flour
1/2 tsp salt
2 tsp baking powder
1/2 cup milk
2 cups blueberries

Preheat oven to 350 degrees.
Grease muffin pans or use paper muffin cups.

Cream butter and sugar in mixing bowl.
Add eggs one at a time and beat well.
Mix together flour, salt and baking powder.
Add dry ingredients and milk alternately to butter mixture.
Add blueberries.
Stir gently to mix in blueberries. Don't over mix them.

Fill greased muffin pan (each about 3/4 full)

Bake at 350 for 30 minutes.

Makes 1 dozen.
