Banana Nut Bread
Although the recipe for this Banana Nut Bread calls
for baking this cake in a rectangular pan, there's nothing
stopping you from using almost any shaped pan. You can use loaf pans
or even round cake pans to make a layer cake. Or, you can even
make
some muffins. I found these
giant muffin pans
that you can use to make some giant muffins.
Ingredients
| 2 large | bananas, mashed |
| 1/2 cup | butter, softened |
| 2 | eggs, beaten |
| 1 cup | chopped nuts |
| 2 cups | flour |
| 1 cup | sugar |
| 1 Tbsp | cinnamon |
| 1 tsp | baking soda |
| 1/2 tsp | salt |
Preheat oven to 350 degrees.
Grease and flour 9"x5"x3" baking pan.
Cream butter in mixing bowl.
Add bananas and eggs; mix well.
Combine flour, sugar, cinnamon, baking soda and salt and add to banana
mixture.
Stir in nuts.
Pour into greased 9x5x3 pan.
Bake at 350 degrees for approximately 1 hour, or until golden.
Makes 1 loaf.
Tip: Double, or even triple the recipe and freeze a couple of loaves for
later.
To freeze: Let loaves cool completely. Wrap in plastic wrap or wax
paper and put ziplock bag, then store in freezer.
To thaw: Remove from bag and take off plastic wrap while the loaf is
still frozen. Thaw on plate or cake dish.
