Banana Nut Bread



Although the recipe for this Banana Nut Bread calls for baking this cake in a rectangular pan, there's nothing stopping you from using almost any shaped pan. You can use loaf pans or even round cake pans to make a layer cake. Or, you can even make some muffins. I found these giant muffin pans that you can use to make some giant muffins.

Ingredients

2 large bananas, mashed
1/2 cup butter, softened
2 eggs, beaten
1 cup chopped nuts
2 cups flour
1 cup sugar
1 Tbsp cinnamon
1 tsp baking soda
1/2 tsp salt


Preheat oven to 350 degrees.
Grease and flour 9"x5"x3" baking pan.

Cream butter in mixing bowl.
Add bananas and eggs; mix well.
Combine flour, sugar, cinnamon, baking soda and salt and add to banana mixture.
Stir in nuts.

Pour into greased 9x5x3 pan.
Bake at 350 degrees for approximately 1 hour, or until golden.

Makes 1 loaf.

Tip: Double, or even triple the recipe and freeze a couple of loaves for later.
To freeze: Let loaves cool completely. Wrap in plastic wrap or wax paper and put ziplock bag, then store in freezer.
To thaw: Remove from bag and take off plastic wrap while the loaf is still frozen. Thaw on plate or cake dish.
