Baking bread can be a little intimidating. Worrying about whether the yeast is ok. Or, wondering if the bread has risen enough can make it a little stressful. But, when you remember that it's not rocket science, you'll do fine. One of the keys is to not handle the dough too much; just enough to mix the ingredients.
One of the great things about some of these breads is that instead of making them according to the recipe, you can easily make muffins instead. I like to make muffins because they're like those "personal pan pizzas". You just feel special with your own muffin. (I know, I'm being silly here). Anyway . . .
You can also freeze the
muffins and take them out of the freezer one at a time;
anytime you need a little snack. They're much easier to defrost
than a whole loaf
of whatever kind of bread you've made.
