Summertime Desserts
It's summertime. It's hot and it's humid. But of course, you still have
to eat, right?
And you definitely have to eat dessert. Right? So, what sort of desserts
are there that are quick, easy and cool to make in the heat of the summer?
Here at BakingDesserts.com we have some delicious answers. From pan cookies to no-bake pies, you can stay cool and still enjoy great desserts.
When I don't have a lot of time, but I still want to make some yummy cookies. I mix up the dough and make some pan cookies. This is also a good time to use that dough you made and stuck in the freezer for an emergency. If you make pan cookies you don't have to stand in front of a hot oven spooning out drop cookies. You can use almost any cookie dough (except rolled cookie dough) for pan cookies. My old standard is chocolate chip pan cookies; or Blondies, as some people call them. You use the same Chocolate Chip Cookie recipe and just spread the dough in a greased 9"x13" baking dish. Bake for about 30 minutes and you're all set.
If you're going to eat them right away, cut them into 2" squares. If you want to freeze some for later, cut the baked cookies into just 2 big pieces, wrap in plastic wrap and a freezer ziplock bag. They'll keep better in the freezer if you don't cut them into individual pieces just yet. Cut them when you're ready to serve them.
Some other recipes you can use for pan cookies are another favorite: Oatmeal Cookies. You can make them with or without raisins; with a little shredded coconut; or with butterscotch morsels for a nice sweet taste.
Seven-Layer Bars are an easy summertime recipe. You have to melt the butter to make the crust, but you can do that in the microwave.
Hermits are also baked in a pan. Once again you're faced with the choice of raisins or no raisins. I skip raisins, but add nuts to recipes any chance I can.
Anything with lemon seems to go well in the summer. Our Lemon Bars are a great summertime dessert. They're easy to make and are light and tasty.
If you more interested in pies, try some of our no-bake pie recipes. You won't need to deal with a hot oven. You will, of course, need a refrigerator to keep these yummy pies fresh.
With our German Chocolate Cream Pie you WILL need to use a burner, but you won't need an oven to bake the pie. Our Strawberry Dream Pie is another great summertime pie that requires no baking.
Lemon Chiffon Pie also requires heating on the stove in a double boiler. But, you won't have to use the oven for this pie, either. And the lemon is a nice refreshing summertime flavor.
Now if you just have to have a Chocolate Cake for dessert, why not make cupcakes instead of a big cake. You can freeze individual cupcakes and take them out whenever you want a snack. This avoids the problem of keeping a big cake fresh in hot weather. But, if you can go through a layer cake in a day or two, you don't have to worry about fitting it in the refrigerator or having it spoil in hot weather.
